Recipe Friday: Green Onion-Parmesan Mornay Sauce

Right around our second anniversary we got invited to join an Couple’s Dinner Group. The group contains 6 couples and meets monthly at one of the couple’s houses. Whoever is hosting picks a theme for the evening, then every couple makes 1-2 dishes that tie in with that theme. Last month we hosted for the first time and picked an Italian theme.

I made a big dish of noodles and then a homemade Pomodoro sauce and a Green Onion-Parmesan Mornay Sauce. While I thought both sauces turned out amazing this one definitely stood out.

Using online websites for recipes can be helpful because you can plug-in the amount of servings and it will automatically update the recipe.

This is the recipe for serving 6 (I prepared for 16).

  • 1/2 cup butter
  • 1/2 cup chopped green onions
  • 1/4 cup chopped fresh parsley
  • 2 tablespoons all-purpose flour
  • 2 cups cream
  • 4 ounces shredded Swiss cheese
  • 4 ounces fresh grated Parmesan cheese
  • salt and pepper to taste
    1. Melt butter in a heavy saucepan over medium heat. Stir in green onion and parsley; cook until the green onion has softened, about 3 minutes. Stir in flour and cook for 3 minutes more, stirring constantly.
    2. Pour in the cream, increase heat to medium-high and bring to a simmer. Once the cream comes to a simmer, reduce heat to medium-low and whisk in the shredded Swiss and Parmesan cheeses. Slowly simmer, uncovered, until the sauce has thickened, about 3 minutes. Season to taste with salt and pepper before serving.

    I honestly don’t want to know the amount of calories in this sauce. It will only be made for occasions when needing the rich/creamy sauce for comfort food or special occasions. Yum!

    Side note. This turned out to be a very thick creamy sauce when I made it. When refrigerating the leftovers it turned into a solid. Still tastes great reheated, it just comes out of the leftovers container in a blob.
