Recipe Friday: Ice Cream Cake

Oh scrumptious cake of cakes! I made you once for Eric’s birthday 2 years ago and now it was time to make you once again. So delicious my mouth waters thinking about you.

Sorry, I got distracted…


  1. Box of favorite brownie mix
  2. Half Gallon of favorite complimenting ice cream
  3. 1 bottle of complimenting ice cream hard shell

A delicious combination!

Ingredients for Vanilla Whipped Cream Frosting

  1. 3 cups heavy or whipping cream
  2. 5 Tbsp granulated sugar
  3. 1 1/2 tsp vanilla extract

Prepare brownies in 8 in round cake pan


Put wax paper in another 8 inch round pan and evenly spread softened ice cream, then re-freeze

Cover top side of ice cream with hard shell coating and re-freeze

How to make the frosting. (Instructions from Above Link)

  1. Chill the bowl and whisk attachment of a stand mixer for 20 min. in the refrigerator or 5 min. in the freezer.
  2. Pour the heavy cream into the bowl and whisk on medium-high speed until it just starts to thicken.
  3. Slow the speed down to medium and gradually pour in the sugar. Continue to whisk until soft peaks form.
  4. Add the vanilla extract and continue to whisk by hand until the cream is smooth, and stiff peaks form (the cream will stand up straight when the whisk is raised).

Spread frosting over brownies

Carefully add the ice cream layer, hard shell down

Cover top of the cake with hard shell and then re-freeze

Coat entire cake in frosting, then re-freeze
